Crustless Coconut Pie
Yield: 1 pie
Ingredients:
3/4 stick unsalted butter, melted, plus more for greasing
1 1/2 cups sugar
3 large eggs
3 TBSP flour
1/4 tsp baking powder
2 cups sweetened shredded coconut
1 can (12 fluid oz) evaporated milk
1 tsp vanilla
Directions:
Preheat the oven to 350° F.
Butter 9-inch glass pie plates.
In a large bowl, whisk the melted butter with the sugar.
Add the eggs and beat until smooth.
Stir in the flour, coconut and milk.
Pour mixture into pie plate.
Bake in the lower third of the oven for about 1 hour, until the pies are firm to the touch and golden.
