Crustless Coconut Pie
Yield: 1 pie
Ingredients:
- 3/4 stick unsalted butter, melted, plus more for greasing
- 1 1/2 cups sugar
- 3 large eggs
- 3 TBSP flour
- 1/4 tsp baking powder
- 2 cups sweetened shredded coconut
- 1 can (12 fluid oz) evaporated milk
- 1 tsp vanilla
Directions:
- Preheat the oven to 350° F.
- Butter 9-inch glass pie plates.
- In a large bowl, whisk the melted butter with the sugar.
- Add the eggs and beat until smooth.
- Stir in the flour, coconut and milk.
- Pour mixture into pie plate.
- Bake in the lower third of the oven for about 1 hour, until the pies are firm to the touch and golden.
- Cool completely before serving.
